Congratulations to Katherine Wilson for attaining Summa cum Laude upon graduating from the Master of Science in Holistic Nutrition program. Katherine has a B.A. from Colorado College in Gender Studies, is a certified Integrative Health Coach, a certified Natural Chef, and is trained in interventions for eating disorders, and is a Certified Tobacco Cessation Specialist. At Hawthorn she focused on transitioning people to a whole food diet by utilizing person-centered planning and experiential education to navigate the food system. Katherine’s area of focus is in the connection between the gut and physical and mental well-being, medication optimization, nutritional supplementation, and the correlation between inflammation, food sensitivities, food allergies and illness. She is currently the Integrative Health Director at CooperRiis, a residential therapeutic mental health community, where she provides individual nutrition consultation, coaching, and education. She also practices as a private nutrition consultant in the Asheville, NC community. She believes that incorporating nutrition education into primary care creates sustainable outcomes and long-term lifestyle changes for patients and that by implementing these nutritional, wellness, and lifestyle changes people can become active participants in changing the course of their individual health and the health of the community. Her thesis is entitled The Role of Fiber and Healthy Gut Bacteria in Preventing Inflammation. Keep up the good work, Katherine!
