Bethany Swanquist

Congratulations to Bethany Swanquist for graduating Summa cum Laude from the Master of Science in Health and Nutrition Education program. Bethany received her Bachelor's degree in Hospitality Business from Michigan State University and is a Certified Dietary Manager and the founder of Wildflower Wellness, Inc., a whole foods nutrition and health behavioral counseling business. She believes that food is medicine and holistic nutrition focuses on the needs and goals of the individual, while supporting lifestyle and behavioral changes. Her passion for holistic wellness has led to speaking engagements about using nutrition to prevent and fight cancer and minimize side effects associated with cancer treatment. Bethany will be pursuing her Board Certification in Holistic Nutrition and masters’ certificates in aromatherapy and herbalism. Her thesis is entitled, Short Term Fasting to Slow the Growth of Localized Prostate Cancer in Patients in Active Surveillance. You can find Bethany at Keep up the good work, Bethany.

Rajesh Kumari

Congratulations to Rajesh Kumari for graduating Magna cum Laude from the Doctor of Science in Holistic Nutrition program. Rajesh is a Registered Dietitian Nutritionist (RDN) who has worked in the field of nutrition in health care for the past twenty years. She received her Master’s of Science degree in Nutrition from CCS Haryana Agricultural University in India and then completed her dietetic internship and graduate training at the College of Saint Elizabeth in Morristown, New Jersey. Her studies and extensive clinical nutrition experience, primarily practicing medical nutrition therapy for the management of chronic conditions including stroke and other neurological conditions, sparked her interest in the pursuit of an advanced degree. Another motivation to advance in holistic nutrition was the experience and exposure to integrative and functional medicine grand rounds at Atlantic Health System, which focused on alternative and complementary therapies - particularly diet and lifestyle modifications for the treatment and prevention of various chronic conditions. As an advocate of nutrition for healing and wellness, Rajesh has implemented several programs in which she developed a nutritional support delivery guideline for nursing and also participated in a multidisciplinary team for nutrition management of trauma and critical care patients. Her dissertation is entitled Multimodal Dietary Treatment in Tourette's Syndrome. Best of luck to you, Dr. Kumari!

Eileen Joyce

Congratulations to Eileen Joyce for receiving the Master of Science in Holistic Nutrition degree with a Summa cum Laude designation. Eileen also holds a master’s degree in electrical engineering from the University of Southern California, and worked as an avionics system’s engineer with defense contractors and the US department of defense.

She decided to pursue a master’s degree in Holistic Nutrition from Hawthorn University when her family moved, after living for several years in Europe, back to the convenient fast foods in North America. Eileen saw gradual yet devastating changes in her children’s health. Not knowing what to do with these changes, she decided to get back to basics and cook homemade meals like she used to serve her family. She was amazed at the profound effect that food had  on her family’s health and happiness.

At the time of choosing a thesis topic, Eileen encountered a number of women with a myriad of health problems while taking hormonal contraception. These women were prescribed antidepressants and anti-anxiety pills to alleviate their symptoms. There seemed to be no understanding between the side effects of hormonal contraception and symptoms women were experiencing. To find out whether or not there were negative health effects for women as a result of taking hormonal contraception she did extensive research and submitted her thesis entitled Hormonal Contraception and Women’s Health. Good work, Eileen!

Walter Chavez

Walter Chavez is to be congratulated for graduating from the Wise Traditions Nutrition certificate program with the Magna cum Laude designation. Walter also earned a Bachelor of Arts degree from Stony Brook University, Stony Brook, New York in Multidisciplinary Studies. After joining the Weston A. Price Foundation, enjoying the recipes in Sally Fallon's cookbook, and realizing his passion for nutrient-dense food he chose Hawthorn to further his knowledge of food preparation, exercise, and nutrition. In addition, Walter wanted to gain a clearer and deeper understanding of traditional diets to teach others of the health benefits of traditional diets. Best of luck, Walter!
